Pentastarch: A starch composed of more than 90% amylopectin etherified to the extent that an average of 4 to 5 of the OH groups present in every 10 D-glucopyranose units of the starch polymer have been converted to OCH~2~CH~2~OH groups. Starch 2-hydroxyethyl ether. CAS-9005-27-0 (1987).
